About the location:

AMAALA is situated along Saudi Arabia’s northwest coast and is home to some of the most diverse natural environments. Marking a new chapter for comprehensive wellness tourism, Four Seasons Resort and Residences AMAALA at Triple Bay will feature 220 keys comprising of rooms and suites, as well as villas with their own private pools, and 26 branded residential villas, all thoughtfully designed to offer breathtaking bay and sea views. The resort will include a luxury spa nestled within its garden of tranquility and inspiration featuring a sculptured waterfall. The Organic Spa Garden will be a focal point and treatment experience set to stimulate the senses, offering extensive therapeutic remedies including halotherapy, cryotherapy, and advanced skin therapies. For fitness enthusiasts, the property will offer a bespoke collaboration with fitness trainer Harley Pasternak to seamlessly merge high-performance training with the limitless potential of Triple Bay’s 300 hectares (741 acres) of untouched hills, wadis, and beaches. The pristine terrain includes trails perfect for canyoning and exploring the rugged cliffs and valleys. Guests and residents can also take part in an array of guided hikes, mountain biking, and equestrian bridle trails, or work on their game at the spectacular 27-hole oceanfront golf course.

About the Role
As Sous Chef – Butchery & Commissary, you will oversee all production and preparation activities related to proteins and bulk mise en place for the resort’s culinary operations. You will play a critical role in establishing the department during the pre-opening phase and ensuring its smooth function post-opening, supporting multiple restaurants and banquet facilities with precision, efficiency, and the highest standards of food quality.

What You Will Do

  • Lead the pre-opening setup of the butchery and commissary kitchens, including layout planning, equipment installation, and team onboarding.

  • Oversee all meat, poultry, and seafood breakdown, ensuring correct cuts, yields, portioning, and storage.

  • Manage production of bulk sauces, stocks, marinades, dressings, and other core components needed across outlets.

  • Ensure all food safety, sanitation, and hygiene protocols are strictly followed in both commissary and butchery areas.

  • Supervise and develop a team of chefs, butchers, and prep cooks through training and daily coaching.

  • Monitor inventory levels, conduct ordering, and ensure efficient stock rotation and minimal waste.

What You Bring

  • Proven experience as a Sous Chef or senior production chef in butchery and commissary operations, ideally within a luxury resort or large-scale hotel.

  • Deep technical knowledge of protein fabrication and high-volume production.

  • Excellent organizational and leadership skills.

  • Strong commitment to hygiene, quality control, and operational efficiency.

  • Implement and monitor HACCP and sanitation standards across all butchery & commissary sections.

  • Pre-opening experience is highly preferred.

  • Suitable candidates must be eligible to work in Saudi Arabia. Fluency in English is essential.
